Organic Gluten-Free Vegan Bites

Ingredients:
(Yields approx. 16-18 bites)
Dry Ingredients:
- 1 ½ cups organic rolled oats
- 1 cup organic oat flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon sea salt
- 1 teaspoon organic Ceylon cinnamon
- 1/3 cup ground walnuts
- 1/3 cup unsweetened coconut flakes (slightly ground in a blender or use shredded coconut)
Wet Ingredients:
- ¼ cup coconut oil (softened)
- ¼ cup organic coconut sugar
- ¼ cup organic coconut milk
- 1 teaspoon vanilla extract
- ½ cup homemade applesauce (blend 2 small apples with skins on)
- 1 tablespoon psyllium fiber
- 1 tablespoon organic ground flax seeds
- 1 tablespoon organic chia seeds (mixed with 3 tablespoons water, allowed to thicken into a gel)
- ½ teaspoon pure Stevia powder (or ¼ teaspoon liquid Stevia)
- 1 teaspoon pure maple syrup
Add-ins:
- 1/3 cup diced raisins
- 3 pitted dates (finely chopped)
- ½ cup cranberries (pulse in a blender until broken down)
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking pan with parchment paper for easy cleanup.
- Prepare Dry Ingredients: In a large bowl, combine the following dry ingredients:
- Rolled oats
- Oat flour
- Baking soda
- Baking powder
- Sea salt
- Ceylon cinnamon
- Ground walnuts
- Ground coconut flakes
Mix thoroughly to combine all the dry ingredients evenly.
- Prepare Wet Ingredients: In a separate bowl, combine the following wet ingredients:
- Coconut oil (softened)
- Coconut sugar
- Coconut milk
- Vanilla extract
- Homemade applesauce
- Psyllium fiber
- Ground flax seeds
- Chia seed gel (mix chia seeds with water, allow to thicken)
- Stevia powder (or liquid stevia)
- Maple syrup
- Raisins
- Dates
Stir everything together until well combined.
- Combine Wet and Dry Ingredients: Slowly add the wet mixture to the dry ingredients. Stir until a dough-like consistency forms. The mixture should resemble cookie dough—thick and slightly sticky.
- Shape and Flatten Bites: Using your hands or a spoon, roll the dough into small balls and place them on the parchment-lined baking sheet. Flatten each ball slightly with your fingers or the back of a spoon to form a round bite-sized shape.
- Bake: Place the baking sheet in the oven and bake for 18-20 minutes at 350°F or until the bites turn golden brown. If you’re using a convection oven, this can help them bake evenly and slightly faster.
- Cool and Serve: Once baked, allow the bites to cool for a few minutes on the baking sheet before transferring them to a cooling rack. Enjoy immediately or store in an airtight container for up to a week.
