Ingredients
  

  • 1 cup cooked chickpeas fresh organic
  • 2 small corn tortillas
  • 1 tbsp olive oil organic extra virgin
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper optional
  • 1 avocado sliced
  • ¼ cup diced red onions
  • 1 tbsp fresh cilantro chopped
  • 1 tbsp lime juice
  • tsp Sea Salt optional

Instructions
 

  • Heat the olive oil in a pan over medium heat.
    1 tbsp olive oil
  • Add chickpeas, paprika, and cayenne pepper (if using), and cook for 5-7 minutes until heated through.

  • Warm the tortillas on a dry skillet for 1-2 minutes.
    2 small corn tortillas
  • Assemble tacos: layer chickpeas, avocado, onions, and cilantro on each tortilla.
    1/4 cup diced red onions, 1 tbsp fresh cilantro, 1 avocado
  • Drizzle with lime juice and serve immediately.
    1 tbsp lime juice, 1/8 tsp Sea Salt
  • If using dried chickpeas then see further instructions
    Long Soak:Place the chickpeas in a large bowl and cover with water. Let them soak overnight, for 8–24 hours.
    Quick Soak:In a large pot, cover the chickpeas with water and bring to a boil. Boil for 2 minutes, then remove from heat, cover, and let sit for 1 hour.
